Chicken Scarpiello

Serves- 2 People


  1. ½ Cup flour
  2. 1 cup vegetable oil
  3. 1 cup of white wine
  4. 2 Tbsp balsamic vinegar
  5. 1 Whole chicken
  6.  2 cup shiitake mushroom
  7. 1 cup suasage
  8. 2 cups of chicken stock
  9. Fresh rosemary
  10. Sliced Garlic

Prepping List:

  1. Tongs
  2. 2 sauté pans
  3. Serving plate
  4. Chef knife

Cooking Directions:

  1. Heat sauté pan over high heat, Add 1 cup of vegetable Oil
  2. Lightly dredge the chicken in flour
  3. Sear the chicken in the oil. Sear until golden brown, then place in oven at 500°
  4. In clean sauté pan, add 1 cup olive oil, and the sausage. Saute until golden brown.. In the same pan add  garlic and shiitake mushrooms. Cook until mushrooms are tender. Deglaze the pan with white.
  5. Let sauce reduce, add chicken stock, and balsamic vinegar. An even bubble and glaze-like consistency will be your time for the sauce to be completed.
  1. Salt, Pepper, Hot Pepper
  2. Add Fresh rosemary

Serving Suggestion:

  1. Place a bed of the sauce, shittiake mushroom and sausage on the bottom of the dish
  2. Lay the four pieces of chicken on top of the glaze.
