La Cipollina Recipe
Chicken Scarpiello
Serves- 2 People
Ingredients
- ½ Cup flour
- 1 cup vegetable oil
- 1 cup of white wine
- 2 Tbsp balsamic vinegar
- 1 Whole chicken
- 2 cup shiitake mushroom
- 1 cup suasage
- 2 cups of chicken stock
- Fresh rosemary
- Sliced Garlic
Prepping List:
- Tongs
- 2 sauté pans
- Serving plate
- Chef knife
Cooking Directions:
- Heat sauté pan over high heat, Add 1 cup of vegetable Oil
- Lightly dredge the chicken in flour
- Sear the chicken in the oil. Sear until golden brown, then place in oven at 500°
- In clean sauté pan, add 1 cup olive oil, and the sausage. Saute until golden brown.. In the same pan add garlic and shiitake mushrooms. Cook until mushrooms are tender. Deglaze the pan with white.
- Let sauce reduce, add chicken stock, and balsamic vinegar. An even bubble and glaze-like consistency will be your time for the sauce to be completed.
- Salt, Pepper, Hot Pepper
- Add Fresh rosemary
Serving Suggestion:
- Place a bed of the sauce, shittiake mushroom and sausage on the bottom of the dish
- Lay the four pieces of chicken on top of the glaze.
